Ever get stuck and feel like your meals are on repeat? It’s easier for me to cook my “go to” meals versus the time and effort to try a new recipe.
Did I remember all the ingredients? Will my husband like it? Will I like it? Will I put in all this effort and it will be a waste if we don’t like it?
This week I challenged myself to cook new recipes. I focused on recipes that would not be time consuming or variations of recipes I already know. The first one was Taco Salad. While it was not the healthiest salad I’ve made (I loved adding sour cream), it was my way of incorporating more veggies into our diet. And it was a hit with my husband! The preparation that took the longest was cleaning and cutting the veggies or beans, and cooking the beef is very quick. This recipe is easy to make substitutes and make it fit your liking, for example use ground turkey instead of beef, omit an ingredient, or add more that you love.
Another great thing about this recipe is the ability to do most of the prep work early if needed, say the night before or morning before work. Once prepared I threw the ingredients in the fridge until it was time to cook the meat and combine the ingredients. This will definitely be a repeat meal for my family.
